Quality Grades (1-5)

Based on four factors: Beef Marbling (BMS), color, toughness, and fat content

BMS 8-12 = Grade 5 (A5): Excellent marbling

BMS 6-7 = Grade 4 (A4): Excellent marbling

BMS 3-5 = Grade 3 (A3): Good marbling.
